How to store coffee correctly

A delicious, crisp, flavorful beverage can be made only from quality coffee beans. But even the most expensive and premium varieties lose their initial flavor over time. So if you want to enjoy your coffee for longer, it is important to store it correctly for its expiration date.


Types of storage – long- and short-term

Short-term and long-term storage of the product requires very different conditions. The need to preserve flavor and aroma for a long period of time appears only when bought in advance. For example, if you manage to buy a few packs on sale, or if you order from abroad.


If there is no particular need, you should not buy in advance, it is better to take on the basis of 1-2 weeks. In this case you can enjoy a fresh, fragrant drink every time. This is a very good way to get a fresh, fragrant beverage every time you want to enjoy it.

Shelf life and storage conditions for coffee beans

How long you can store coffee depends directly on the packaging:

  • beans by weight that are dispensed in a paper bag – 2 weeks;
  • in sealed four-ply paper bags – six months;
  • in the same bags with an additional polymer film coating – 9 months;
  • shelf life of roasted coffee beans in a package with an air valve – 1 year;
  • in a factory opaque can – 1.5 years;
  • in a vacuum pack – 1.5 years.


The shelf life of coffee after opening the package lasts 12-14 days. The optimal storage temperature is room temperature, around 25 degrees.

The wrong container for the beans can lead to a rapid loss of taste. So if you want to prolong their shelf life, the choice of container must be approached responsibly:

  1. Factory bags of foil with ziploc and valve. They reliably protect against odor, moisture, light, and do not let air in. Due to the valve gases come out of the fresh grains. Also such a bag can be twisted to remove excess air – this minimizes oxidation of essential oils, responsible for the taste and aroma during the shelf life of coffee.
  2. Glass and ceramic jars with lids with a silicone gasket for a tight seal will keep air out. They also protect the contents from moisture and odors. The glass jar should either be opaque, or it should be kept in the dark. Just keep in mind that it is better to pour the beans into the jar a couple of days after roasting, to get out the gases.   4. Plastic containers are an extremely unsuccessful option. There may be a specific smell, and the moisture protection is weak due to the lack of an airtight lid, so the coffee can spoil before the expiration date.
  5. Wooden boxes and boxes – suitable only for the role of decorative elements. They do not save from moisture, odors, and after 5-6 days begins to oxidize, and if the product is ground – even earlier.

To prolong the shelf life of the grains, you should store them in a closed cabinet. There they will stay in the dark and constant humidity, without drafts. Ideally, the cabinet should be located away from the stove, sink, and strongly smelling spices.

Can I keep it in the fridge?

Many people advise storing coffee in the refrigerator – supposedly at subzero temperatures the esters do not weather. In reality, due to the dense structure of the oil and so do not evaporate. Only the aroma escapes. The problem is not the cold, but the oxidation, so it is important to avoid contact with oxygen during the entire shelf life of the coffee.

To increase the shelf life of coffee beans at home, you can put it in the freezer, but only with dry freezing. There you can keep the product for 2 months, during which it will retain its rich bouquet.

Keep in mind that repeated freezing is not allowed, otherwise the structure of the beans will be disturbed. It is better to store portions wrapped in foil and stored in a sealed container.

Rules for storing ground coffee

Ground coffee powder becomes more vulnerable, but sealed packaging with evacuated air allows for a longer shelf life. The product is sold in such packs, and you can pack it yourself only with the help of a vacuum packer.

If you do not have such a device, it is better to store ground coffee at home in the factory packaging, without transferring anywhere. As a rule, these are special packs in which condensation does not form. They also protect the product from odors, sunlight and moisture. The last point is especially important, because ground coffee is hygroscopic. Powder dries up much faster, and moisture protection is crucial here.

The shelf life of ground coffee in a vacuum bag is 1 year, in a foil factory bag or jar – a week, in the open form – 1 day.

What happens if you store it incorrectly

Improper storage inevitably degrades the characteristics that everyone loves the invigorating beverage for:

  • the grains oxidize in the air and change or lose flavor;
  • flavor is lost because the aroma compounds are not stable;
  • the crema
  • becomes thin and unstable as the bean structure thickens;

  • coffee absorbs moisture – flavor deteriorates and mold develops;
  • if it dries and oxidizes at the same time, the beans decompose;
  • coffee absorbs ambient odors.

But more importantly, if the conditions of storage are wrong, the product can become dangerous to health. If it is too dry and moldy, you cannot brew it and poison it. If the coffee bean smells rancid and greasy, it is an indication of spoiled oils, which are bad for the liver.

How to store instant coffee

Instant coffee is made through the complex processing of beans with the addition of artificial flavorings. After opening the package, the essential oils are more quickly weathered than from the natural ground product. Therefore, it is necessary to store instant coffee in a printed package in the dark and dry.

The maximum shelf life is 2 years. Then the flavor is completely gone. In addition, synthetic additives can enter into various reactions, so it is dangerous to drink expired coffee.
